Nigerian Peanutty Suya Skewers

Suya or tsire is a traditional smoked spiced meat skewer which originates from Northern Nigeria, Hausa Land. There are many variation of Suya in traditional Hausa cooking (such as Balangu, Kilishi etc), but the most popular being suya.

Ingredients for preparation of Suya

  • 1/2 cup roasted unsalted peanuts
  • 1tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground cinnamon
  • Dried parsley
  • Dried thyme
  • 1/2 tsp cayenne kosher salt and pepper
  • 1 tsp canola oil
  • Beef sirloin thinly sliced
  • Lime
  • Smoked paprika
  • Dried oregano

Process

In a food processor, pulse peanuts with spices, add salt, dried oregano, cayenne pepper, thyme, dried onion, dried garlic, dried parsley and smoked paprika until finely chopped. Add oil and pulse to combine. Press mixture into both sides of beef, cover and refrigerate at least for an hour or up overnight (marinate). Heat grill on medium-high. Griddle beef onto skewers and grill until charred, 2 to 3 minutes per side. Squeeze lime over top then transfer to platter to serve with pepper.

(Daalu, En-le) Wondering what that means? That is Yoruba and Igbo greetings in Nigeria which simply means Hello! Still wondering why I used that? Yes! Nigeria!, Nigeria boasts of the largest economy in Africa. Nigeria has an abundance of resources including oil and gas. Nigeria is one of the largest film producers in the world. Nigeria cuisine consists of dishes from the hundreds of ethnic group that comprise Nigeria. Like other west African cuisines, it uses spices and herbs with palm to create deeply flavored sauces and soups. I have decided to pick one Nigerian dish and share its recipe with you all. Hibiscus Tea ( Sobolo)

Sobolo also known as Hibiscus Tea or Bissap is a refreshing drink native to Ghana. It can be made from either roselle leaves or flowers. Sobolo has many health benefits. It helps to protect, strengthen the immune system from colds and other bacteria infections. It also prevent constipation and bladder infection. Now let Betty teach you how to make Sobolo.

Ingredients for sobolo

  • Blended pineapple juice
  • 3 Indian gloves
  • Sugar
  • Ginger
  • 3 cups of water

Process

Boil your hibiscus leaves with water, gloves and pineapple 🍍 leaves 🍃, leave sobolo for 10 minutes. Drain the leaves add your pineapple juice and sugar. Allow to cool down. Sobolo can either be refrigerated or taken warm. I love mine with crushed ice 🧊 though 😁🙊

Cream cheese fruit dip with pancakes

Fruits are essential source of vitamins and minerals. Fruits is an important part of a healthy diet and variety is as important as quantity. Learn how to increase your intake with fruits. Pancakes on the other hand, boost your carbohydrate intake for the day.

Ingredients for cream cheese

  • Ounce package cream cheese
  • 2 cups Powdered sugar
  • 1 teaspoon of vanilla extract
  • Marshmallow crème
  • 2 tablespoon orange juice
  • 1 tablespoon lemon juice
  • Strawberry, mango, pineapple, blueberries, raspberries (Fresh fruits of any kind)

Ingredients for flat pancake

  • 2 cup flour
  • 1 cup sugar
  • Vanilla extract
  • Butter
  • Milk
  • Egg
  • Nutmeg

Process

In a mixing bowl, beat “cream cheese”, add orange juice, lemon juice, vanilla extract and sugar. Concentrate until smooth. Fold in the marshmallow crème and serve with fresh fruits. Store in a refrigerator.

Mix all “pancake ingredients” until incorporated, but do not over mix. Heat a griddle or non stick pan under low heat and grease with a little butter or oil. Drop batter using 1/4 cup into hot pan. Once the bottom side is golden, flip and brown remaining side. You could serve with butter and maple syrup (optional).

Let’s make Ghana jollof

Jollof with green sauce chicken thigh,fried plantain, sausage and avocado salad .

Jollof is a West African dish. The origin of Jollof can be traced to the 1300’s in the ancient Wolof Empire which spanned parts of todays Senegal. However, there is an argument between Ghana Jollof and Nigerian Jollof. Hopefully after trying my Ghanaian jollof recipe you will know Ghana has the best Jollof.

Ingredient for the Jollof

  • 3 cups of basmati rice 🍚
  • 3 tin tomatoes sachet
  • Blended tomatoes with scotch bonnet pepper
  • Oil
  • Red onion 🧅
  • 2 shrimp Maggie cubes
  • Curry powder
  • Powdered red pepper
  • One sachet of onga all purpose seasoning
  • One sachet of onga stew seasoning
  • 2 cups of water
  • Parsley 🌿
  • Salt

Ingredients for Chicken thigh, plantain and sausage

  • Neatly washed Chicken thigh
  • 3 lemons 🍋
  • Blended sizable amount of ginger, garlic,red onion, spring onion and scotch green pepper.
  • Spices of your choice
  • Plantain
  • Sausage

Ingredients for avocado salad

  • Cucumbers 🥒
  • Tomatoes 🍅
  • Onion 🧅
  • Avocado 🥑
  • Olive
  • Parsley 🌿
  • Green peas
  • Egg 🥚
  • Spring onion
  • Carrot 🥕
  • Cabbage 🥬
  • Lettuce 🥬
  • Ketchup
  • Mayonnaise
  • Baked beans
  • Green pepper 🫑

Process

We’d start with the “grilled chicken”. Put your blended ginger, garlic, onion…etc on top of fire with the chicken add a little water and leave to boil for few minutes. Put the boiled chicken in a an oven tray, top your chicken up with the chicken stock and leave for 1 hour to grill. Fry plantain and sausage.

Jollof”Put oil onfire and add chopped onion ,add your parsley 🌿and stir for few minutes. Add tin tomatoes and blended tin tomatoes.Leave to boil for 10 minutes. Add all onga spices, curry powder, powdered pepper and Maggie cubes . Leave to boil for a while and add your basmati rice. Add water and a reasonable amount of salt. Cover saucepan nicely with napkins and leave to cook for 30 minutes. Jollof loves attention so make sure it does not burn and do not stir too much.

Avocado Salad” add little amount of veggies in a bowl. Top up with mayonnaise, avocado, ketchup, egg, olive and baked beans. Apply the same layout with the remaining veggies to form a layer and add your parsley 🌿. Your avocado salad is now ready for consumption.
