Nigerian Peanutty Suya Skewers

Suya or tsire is a traditional smoked spiced meat skewer which originates from Northern Nigeria, Hausa Land. There are many variation of Suya in traditional Hausa cooking (such as Balangu, Kilishi etc), but the most popular being suya.

Ingredients for preparation of Suya

  • 1/2 cup roasted unsalted peanuts
  • 1tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground cinnamon
  • Dried parsley
  • Dried thyme
  • 1/2 tsp cayenne kosher salt and pepper
  • 1 tsp canola oil
  • Beef sirloin thinly sliced
  • Lime
  • Smoked paprika
  • Dried oregano

Process

In a food processor, pulse peanuts with spices, add salt, dried oregano, cayenne pepper, thyme, dried onion, dried garlic, dried parsley and smoked paprika until finely chopped. Add oil and pulse to combine. Press mixture into both sides of beef, cover and refrigerate at least for an hour or up overnight (marinate). Heat grill on medium-high. Griddle beef onto skewers and grill until charred, 2 to 3 minutes per side. Squeeze lime over top then transfer to platter to serve with pepper.
